When I make a taco salad, I go all out!

I luv to make spicy beans, and rice, with just the right amount of savory flavors and heat, to really lift up my salad.

The spicy beans and rice is one of my favorite dishes, so versatile and easy to make, it is packed full of flavors, heat and yummy rice.

I like to saute the onions, garlic, and jalapenos until soft and fragrant, adding cumin, chili powder and onion powder along the way.

Once the flavors have come up to heat, I like to add in my pre-cooked rice, folding it gently until well mixed.

Of course test tasting is essential to the cooking process for this dish, I am pretty sure by the time I get to putting some of the spicy my plate, I am on my third helping!

Of course there are different versions of this dish, depending on the type of pepper that you have on hand, or like to use.

When I first started making it, I used green pepper! Yup crunchy sweet green pepper, than I got bold and switched to a red pepper, yup still crunchy and sweet.

 

I pondered for awhile and realized what the dish and I were missing in life, was a little bit of heat.
So I started by adding some jalapeno, this did the trick, it gave the rice a nice heat and much nicer flavor profile.

Experimentation took place, and I think I went thru all the pepper types I could find. Some peppers were so amazingly hot that I could not even eat the rice, boy were my chickens happy to get those leftovers!

Instructions

  1. Make a pot of your favorite rice, when done set aside. Mix, jalapenos, garlic, green chilis, onions together, saute in butter until fragrant and soft. Add chili powder, cumin , red pepper flakes, onion salt. Add red kidney beans and black beans, stir in until warm. Add in the rice and mix together to temperature, letting the rice soak in the butter and the flavors. Garnish with cilantro.

Note

Try adding corn for a nice sweet flavor and crunch!
