Pastel Party Pie

You know how some people just luv key lime pie, or pecan pie, or a good old fashioned apple pie, my dad’s favorite was the pastel party pie.

The pastel party pie was made rain or shine as close to July 27 that we could get it every year for my dads birthday  this was his all-time favorite pie ever.

I have a vague memory of grandma one hot summer afternoon in the kitchen of the old farmhouse making this very pie, and it was so sweltering hot outside, in Wisconsin in July!

Because the pie has an ice cream base, we were rushed in, completed the singing of the birthday song and rushed to make sure we ate it before it turned to soup.  All the delicious pink fruity ice cream soup!

 

 

 

Pastel Party Pie

Instructions

  1. Drain berries, add water to juice to make 1/1/2C. Heat to boiling add jello, dissolve. Add ice cream by spoonful stir until melted, chill until almost firm. Fold in berries and pour into your pie shell. Decorate with extra berries.

I luv to eat this pie with a spoon while enjoying a hot summers night on my front porch, listening to the day wrap up and the night begin, summer is the sweetest season of them all. Raspberries or strawberries with the same flavor jello as your fruit makes this pie, sweet and fruity flavorful, with the silky smooth ice cream, makes this pie a delight to eat.
