I learned this recipe from my mom, who I am certain learned this from her mom, it has been passed down thru the years and stayed the same.
By placing crumb mixture on the bottom of the pan with the apples in the middle, this adds a sweet blast of flavor to each bite. The oats give this dish texture in every bite, there’s nothing better than sweet tasting baked oatmeal.
When making this you can use either home canned Cinnamon Sugar Apples or peeled, cored and sliced fresh apples. I do not recommend using canned apple pie filling as it is very sweet and the texture does not work with the oatmeal.
This recipe is very easy, with minimal steps, once the dish is in the oven you can make the whipped cream giving it plenty of time to chill prior to serving.
Preheat the oven to 350 degrees F, lightly butter rub or grease your 8 inch glass baking dish.
Core , peel and slice the apples and sprinkle with lemon juice, set aside.
Place brown sugar, oats, flour, and butter in a large bowl; mix until crumbly. Place 1/2 of the crumb mixture in the bottom of the prepared pan.
Add 1 Tablespoon cornstarch to the apples, mix well
Spread apples evenly over crumb mixture.
Sprinkle with sugar, cinnamon and nutmeg, top with remaining crumb mixture.
Bake in the preheated oven until golden brown, 40 to 45 minutes.
Whipped Cream
If you’ve never made homemade whipped cream, this is the perfect recipe for it.
The amount of heavy cream you use doubles in volume as you whip it, you will get 2 cups whipped cream from this recipe.
To make the whipped cream:
1 Cup heavy whipping cream- the colder the better
2 Tablespoons powdered sugar
1/2 t vanilla extract
Using a stand mixture or hand mixture with the whipping attachment, whip the heavy cream, sugar, and vanilla extract on medium high speed until peaks form, about 3–4 minutes. Medium peaks are between soft/loose peaks and stiff peaks, and are the perfect consistency for topping
Because I made a homemade whipped cream which I topped each serving with ,this recipe will make you want to come back for seconds and thirds, it is that delicious.
Enjoy!
