So, I must make a confession, I really enjoy a hearty breakfast, I always have, to me it’s the most important meal of the day. Eating a good hot breakfast always starts my day off on the right foot.  The ritual allows me time to sit down at the breakfast table, gaze out the window and take in a moment of pure joy as the sun rises and the day unfolds.  I allow myself to enjoy my food and make my plan for the day setting goals, and reflect on what I may need to accomplish for the week ahead.

When I say hearty, I mean I usually prepare sautéed bell peppers, onions, and potatoes, with a scrambled egg and sometimes a homemade Adobo Corn Tortillas  However this morning I was thinking I really wish I had some tater tots on hand.  Looking in the freezer, I became very disappointed in my poor choice that I didn’t buy some in my grocery order last week.

Homemade tater tots are extremely easy to make, and from this day forward I shall never eat another frozen tot ever again. Homemade tater tots put those frozen tots to shame.  The homemade tater tot is fresh and low in sodium; you can spice it up with any flavor you want.

The first step is to parboil the potatoes until soft, yet firm. Once you remove them from the pan, using a large cheese grater shred them. However, it dawned on me that you could use your food processor for a quicker option than shredding by hand.

Add the shredded potatoes to a bowl, add onion powder, garlic powder, a few red pepper flakes, Italian seasoning, salt and pepper, and basil paste (optional) and dill (optional)

Add in about 2 Tablespoons of flour, stir the mixture well, and form into tater tots.  Place the tots in a preheated skillet with oil, brown and cook thru on each side.

Once the tots are brown on every side, remove from the hot oil and add to your plate

Enjoy this delicious addition to your new morning breakfast routine.

  • Place potatoes in a large saucepan and cover with cold water by 1 inch. Bring to a boil and cook until parboiled, about 6-7 minutes; drain well and let coo
  • Using a box grater, finely shred potatoes. Using a clean dish towel or cheese cloth, drain potatoes completely, removing as much water as possible.
  • Transfer potatoes to a large bowl. Stir in flour, garlic powder, onion powder, oregano and dill; season with salt and pepper, to taste. The mixture should be workable but dry. Form potatoes into tots
  • Heat vegetable oil in a large skillet over medium heat. Add tots to the skillet, 5 or 6 at a time, and cook until evenly golden and crispy, about 3-4 minutes.

Notes

For a healthy option, fry these in your air fryer on the air fry setting for 8 minutes
