
What a great invention these Broccoli Cheddar Bites really are!
Broccoli Cheddar Bites are so easy to make, low carb, taste great, pack a healthy punch of broccoli goodness, and are a break from the everyday boring vegetable routine.
I stumbled upon this recipe when I realized I had bought way too much fresh broccoli and wanted to do something fun with it.
This is a great recipe for using your air fryer!
The Broccoli Cheddar Balls are so easy you simply.
Steam or boil broccoli until fork tender
Add hot broccoli to a medium bowl and mash it up with a fork.
Mix in butter, 3/4 C panko breadcrumbs, shredded cheddar cheese, chopped green onion, red pepper flakes, salt and pepper.
Form into meatball shapes, Lightly roll in panko again, and fry in olive oil until nice and crispy.
Make the lemon yogurt sauce:
2/3 C plain yogurt
Zest of 1 lemon
1 T lemon juice
2 tsp minced garlic
2 tsp olive oil
salt and pepper
Mix all ingredients together, refrigerate prior to serving.
Or you may serve with your favorite dipping sauce, ranch, honey mustard, etc.

Notes
This can be made with fresh or frozen broccoli. If using fresh, you'll need 1 giant head or 2 medium heads. Ensure the broccoli is cooked until soft so it is easier to “mash” and mould into meatball shapes. To chop the fresh broccoli: Cut the florets off the broccoli then break up into medium pieces. Boil water in a large saucepan (or do this step in a steamer). Add the Broccoli florets and cook for 3 minutes, or until soft. Drain well. Place into bowl to mash
