  • Into a large bowl, add the corn, add the chopped up peppers and onions, add the can of rotele, add a 1 Tablespoon splash of lime juice and a dash of salt, stir well and set aside.
  • Mix the cheese, Mexican mayo, sour cream, and green chilis into the corn mixture. To top it off add the a generous amount of cilantro on top of the mixture

Notes

You can add in 1/2 package of dry taco seasoning for a punch of flavor.

Canned Chipotle Peppers in Adobo sauce is a great addition.

Layer some pickled Jalapenos on top to bring on the heat!
