
Cranberry Orange Zest Nut Bread is absolutely fabulous!
There I said it, this bread is so moist, sweet and packed full of flavor, and texture, what more could you want!
I luv to make this quick bread during the holidays, as it is part of my tradition to bake two loaves, of the Cranberry Orange Zest Nut Bread so we have one for the Thanksgiving dinner and one to eat during the week after.
This is a nice addition to the holiday table with the fragrant orange zest. After you add in the fresh cranberries, nuts, and orange juice, these add flavor and texture to this moist quick bread.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan. Combine flour, sugar, baking powder, salt, and baking soda in a mixing bowl. Add cranberries and walnuts; stir until well-coated.
- Mix orange juice, egg, oil, and orange zest together in a smaller bowl. Pour orange juice mixture into flour mixture, and stir until just blended. Spoon the batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted near the center comes out clean, about 50 minutes. Remove from the oven and cool in pan briefly before removing to a wire rack to cool completely.

This recipe is easily doubled to make 2 loafs.
This cranberry walnut bread makes an excellent holiday gift. You can wrap each loaf individually in storage wrap and finish with a ribbon or bow. A rosemary sprig inserted into the ribbon is an extra touch that everyone will love.
You can freeze cranberry walnut bread. Wrap the cooled loaf tightly in a layer of storage wrap, followed by a layer of aluminum foil. Freeze for up to three months. Thaw overnight in the fridge.
