When you are in need of a good hearty budget friendly meal, you can always count on Hearty Italian Meatball Soup to hit the spot.
I like to use turkey burger, however I have also made this using ground chuck for the meatballs, either option gives the meatballs good flavor.
When you slow cook the soup overnight, this really allows the vegetables to soften.
The flavors in the crock pot, really come to life as it slowly simmers and the you sleep.
I love waking up to a house that has a deep aroma of Italian cooking flavors flowing thru the house.
The final touch is adding the meatballs and mini pasta noodles. I may or may not sneak a meatball or two prior to putting them in the soup. I really cant help myself, these meatballs are so delicious!!

Italian Meatball Soup

Prepare Ingredients

Saute
Sauté carrots, onion, garlic, celery in pan with butter until soft and fragrant.
Add stock and water to your crock pot-depending on crock pot size you may need to adjust your liquids to cover all ingredients

Simmer
Add sautéed vegetables, Italian seasoning, onion powder, basil, bay leave and pepper to crockpot.
Set the crock pot to simmer on low for 1 hour.
After the 1 hour add 1 can tomato sauce, 1 can diced tomato and the paste to your crock pot.

Prepare Meatballs
Make the meatballs with the 1 pound ground turkey, 1 egg, basil. Italian seasoning and bread crumbs, mix well. Fry in light olive oil.

Cook the Meatballs
When the meatballs are thoroughly cooked add to soup in crock pot.
Continue to simmer on low, add ditalini pasta allow time to cook.

Serve hot delicious soup
When the pasta is cooked to perfection your soup is ready to eat.
Serve with a fresh salad, and hot breadsticks for a complete meal.
