Very Best Ham and Spinach Quiche

The richness of the cheese and eggs, along with the fragrance of the spinach and onions, all nestled in a flaky pie crust, makes this quiche a quick fix for a hungry crowd.

I always like to double or even triple the recipe, and just have quiche all week!

The ham and spinach quiche makes the best leftovers, I swear.

Prepping the quiche overnight gives it a chance to really soak in all the flavors, makes this dish perfect for a quick delicious breakfast!

When my chickens are in a giving mood and lay me more eggs than usual, I like to use them to make a few extra of these yummy quiches.

I make, bake and freeze the quiche in a seal-a-meal bag, and pop them in the freezer.

 

Now that the weather is warming and I can be outside as much as possible.  I like to have a quick breakfast on hand, that I can pop in the oven while I do my morning chores.

When I come in famished, my quiche is hot, ready and waiting for me!

So satisfying to sit down and dig into this hearty healthy dish, that is cost effective and so easy to make.

  1. Brown the chopped onion in butter, until brown and fragrant, set aside to let cool Bake the pie crust per the package instructions, when done set aside to cool Mix eggs with half and half or milk adding salt and pepper. Add onions, shredded cheese and mix into eggs
  2. Layer spinach and ham in pre baked pie shell with the egg and pour cheese mixture until both are used up Sprinkle with parmesan cheese Add some more shredded cheese on top Bake for an hour at 350
  3. Cook at 350 for about 20-25mins until hot and bubble
