You see time flies.

You know the old saying Time flies!  You see I never really believed this before, however now I have proof.

I went on a very relaxing vacation, so when I left it was warm and sunny, when I returned the earth had tilted a bit more and fall is upon us all.

I woke up one morning at the same time I do each day, however this day was different, the sun was not up yet, the air was cold, and I had no idea what time it was!.  I am sure this is normal after a wonderful vacation, however it was like “am in the wrong house, the wrong place, where am I.”

Even Annie and Penny have a bit of a fuzzy coat coming in.  They also are hearty eaters and are obviously getting ready for winter, with a bit more extra extra around the waistline.

The garden that Annie and Penny planted this spring has now produces more giant zucchini than one person can eat.

So I am furiously cranking away at the spiralizer and adding bags and bags of sealameal spiralized zucchini to the freezer for lunches and dinners during the cold winter.

Buckets of jalapeno peppers and tomatoes were also harvested, they made many jars of either peach salsa, or black bean salsa.  I personally cannot wait to eat this on nachos, or with corn tortillas, or as ad addition to that spiralized zucchini LOL.

The garden also gave an abundance of beets, and green beans and spaghetti squash, acorn squash and butternut squash.

The freezer is bursting at the seams, I cant wait until its all gross and cold outside and I can sit down and eat all the yummy items from my garden.

All I gotta do is close my eyes and be transported back to the sunshine and long warm days.

The green tomatoes were made into jars of salsa Verde, with the fresh jalapenos, serrano peppers, green peppers, and onions.  The aroma of salsa Verde cooking should be a Scentsy pot scent!

I luv to take the chicken and pour a jar of the salsa Verde into the crock pot and smother chicken in  let it cook all day on low and soak in all the flavors, when ready serve over rice, so yummy!

With all the jalapenos, I make my own hot sauce. I chop the jalapenos, serrano and onions and cook them until very soft.  They go into the food processor and this makes a nice sauce with tons of texture, flavor and heat.  I like to put this on my eggs for breakfast, toast, and in dinners too.

Annie and Penny agree that if a full freezer doesn’t make you happy what will!

Its true time flies, has wings, one day is not the same ass the next around here!

Now that the kitchen and i have finally found our groove we are able to further the journey with sharing my recipes, thoughts, and kitchen wisdom with the world!
Gone are the days of rushing into the house after a long day at work, and trying to beat Betty Crocker at her own game , tirelessly trying to whip up a nutritious and delicious meal for the family, making it look effortless and taste good too!
Many a night was spent in my work coat cooking dinner, as I had not taken the time to take it off.
Straight to the kitchen , a glass of wine and my favorite casserole dish I went.
This is partly the product of being brought up on a salad, main entrée, with a ton of side dishes, and of course a home baked dessert!

However it was survival of the fittest for my kids as they grew up.
You had one chance to eat dinner, and if you chose to sit there and pout over the broccoli on your plate, many nights when dinner was over, you went hungry.
Ahhh those were the days, the days when parenting was free spirited and fun!
