Spicy Cajun Chicken Sandwich

Are you like me, do you sit around craving a certain food, or certain flavor for your next meal?

Well this is a past time of mine, I find I spend a good portion of my day thinking about food, and what I want to try to make for my next craving meal.

There are days that something spicy and fried really hits the spot, I mean lets be honest, its okay to let ourselves be true to our food self every now and than.

 

There’s nothing better than  Cajun chicken sandwich with pickles on top and homemade potato wedge fries.

The reason the chicken is moist and finger likin good is due to the sour cream hot sauce marinade you coat it in to rest, prior to frying.

Once the chicken hits the hot oil, the aroma will make you drool!

 

Get ready to be hungry and dig in to this moist spicy, melt in your mouth Cajun Chicken Sandwich.

 

Spicy Cajun Chicken Sandwich

The reason the chicken is moist and finger likin good is due to the sour cream hot sauce marinade you coat it in  prior to frying.

  1. Prepare the Ingredients

    Preheat oven to 425

    Cut potatoes in wedges about 1/2 inch.

    Thinly slice the pickle crosswise into rounds, mince a few slices to make 2 tsp.

    Toss potatoes in oil on a baking sheet, roast on top rack in oven 25 mins.

  2. Make the sauce and coatings

    combine mayo and minced pickles, hot sauce and 1/2 tsp sugar .  You also may add hot sauce to taste.

    In a medium bowl combine sour cream and 4 Tbsp water with salt and pepper

    In a shallow dish combine flour, cornstarch and 1/2 the Cajun spice, salt and pepper 

  3. Coat Chicken

    Pat chicken dry and place between two pieces of plastic wrap, pound with a heavy bottom pan until about 1/2 inch think.

    Season all over the the cajun spice that is left.

    Dip the chicken into the sour cream mixture until fully coated on both sides, press into flour mixture.

    shake off excess and than repeat to coat again.

    Set aside.

    In your skillet heat 1/2 inches of oil add the chicken pieces and cook 3-5 mins per side until brown and cooked thru.

  4. Toast the Buns

    Cut each bun in 1/2, butter and toast under broiler until nice and golden brown. Spread with the Cajun sauce.

    Add the chicken patty , pickle to taste.

    Serve with the hot fresh potato wedges.
