Spam Salad

When I was growing up, spam salad was made every week. I mean I really loved it, yet my young brain could not understand why we ate it so much.
I truly had a love affair with Spam, I really did. This was one of the foods, I craved for breakfast, lunch and for snacks!

 

Mostly due to the fact my mom was very strict if she caught any one of us, sneaking the spam out of the leftovers and leaving the noodles behind. It became an obsession with me, to make a game out of not getting caught.

When it came time for me to learn how to feed my family, and not break the bank, I had a revelation one day at the grocery store, it was a real Ah-Ha moment about spam.

The reason we ate it so much was due to the low cost of spam, and the fact that somehow this one item, could be considered in the meat group, offering our young starving bodies some amount of protein.

 

I also went down the spam for breakfast lunch and dinner path as I raised my family for the exact same reasons, and I also was passing on the punishment for anyone picking out the spam from the leftovers.

However to this day, there was no spam salad in the world that could compare to my moms, I don’t know if it was the type of mayo or mustard she used, it just had a really beautiful flavor, you know like anything your mom cooked, it just tasted better!

Mom would serve her spam salad with potato chips, I served mine with pringles, however we both liked to pile our chips hi with spam salad and eat a big mouthful of deliciousness.

Spam Salad

Ingredients

Instructions

  1. Boil the shell noodles until firm, rinse and set aside to cool.
  2. Chop the spam into small pieces, and fry in butter
  3. Chop onions, peppers, ,add peas (optional) Add noodles once very cool, sprinkle with salt and pepper. Stir in the mayo and mustard until creamy. Add cooked spam Gently fold everything together together.
  4. Place in refrigerator, stir and add more mayo if needed before serving.
  5. Garnish with fresh tomato and sliced hard boiled egg as desired

Note

Don't get caught standing in the open refrigerator, picking out all the spam from the leftover salad! Serve with potatoes chips, for the ultimate spam salad potato stack.
