Breakfast Burritos

Loaded Breakfast Burritos are a part of so many happy memories for my family.

You see I was a 4-H mom for about 8 years.  During that time there were many many hours upon hours of practice.  I loved every moment of it.

My daughters were involved in Ranch horse, Gymkhana, Show Horse, Showing Steers, and the 4H dog club.   We were busy, our summer months were jammed packed with awesome outside activities.

I quickly learned one way to keep every one going was to bring snacks, and meals and drinks.

The cooler and I were best friends we were attached at the hip!

Breakfast Burritos soon became a family favorite, there are easy to make, loaded with flavor and packed with a ton of protein.

I soon learned the path to a happy teenager, was to give them plenty of food, I mean a lot of food, and cold drinks.

The night before the loaded breakfast burritos would be made , and all I had to do was grab and go in the morning.

These breakfast burritos went everywhere! They fed a large group of 4hers at the Colorado State Fair, were at every horse event and morning practice.  I even remember stuffing them into my daughters bags for an early morning basketball practice.

The trick is in the filling, with the fresh peppers, jalapenos, the bacon and sausage meat mixture. All cooked to perfection and piled on top of a pile of shredded cheese.

My favorite part is making the buttery scrambled eggs, and add the warm eggs on top of the meat and cheese.

I just love scrambled eggs, any time of the day, they are so delicious and filling.

The final touch is adding in the tater tots, and pack your burrito with even more flavor making this burrito a complete breakfast meal.

Drizzle hot sauce on top of everything before wrapping adds a nice kick of flavor in that first bite.

 

And of course when wrapping these burritos, you definitely need two hands, they are huge!

Description

The trick is in the filling, with the fresh peppers, jalapenos, the bacon and sausage meat mixture. All cooked to perfection and piled on top of a pile of shredded cheese and tater tots, sprinkle some Cholula on this and rollup the tortilla into your burrito!

Instructions

  1. In your cast iron skillet, cook the chopped onion until almost golden brown, add the sweet peppers and jalapeno pepper. Cook thru until the peppers are soft. Add your meat choice thoroughly. drain any grease. Pour 1/2 to 1 can of the green enchilada sauce into the meat mixture. Salt and Pepper. Cook the scrambled eggs in a separate pan with butter. Lay out your flour tortillas add cheese and more cheese and rollup like a burrito.
  2. Spoon the meat mixture onto tortilla
  3. Spoon the eggs onto tortilla, on top of meat and cheese.
  4. Add the tater tots on top of the meat and cheese on your tortilla pour a small amount of green chili sauce on top, drizzle hot sauce.
  5. Now roll your burrito up nice and neat. Starting with the sides, fold each one into center. Grab the other open sides and fold into center, tucking as you go. Your all set!

Note

You can add bacon, sausage, chorizo, whatever your little meat heart desires!
