The first time I was told I was going to eat Grilled cheese with imitation crab, I made that face; you know that particular food face we all have, when something seems less than pleasing.
The golden browned sandwich was offered to me on a beautiful plate, with a neat stack of potato chips to accompany it.
The sandwich was eyeing me, as I began to interrogate it in my mind. Would it taste good, would it be blah, or yucky or gross?
The only way to find out was to go ahead and take a bite, so I picked up the sandwich in both hands to minimize the cheese that was oozing out.
Since my mind was already made up about how this was going to taste, that first bite came as quite a surprise. The first bite was an explosion of deliciousness of abundant flavors and textures.
Bread was crunchy and buttery, the cheese was hot and oozing warm and salty, and finally the imitation crab had a soft light flavor that took this grilled cheese to the next level.

I have to admit that I ate two sandwiches that day, and as my eyes closed for my nap, I did not regret my participation at all.

Sauté the crab in butter and salt and pepper, remove from pan.
Lay a piece of bread buttered onto the hot griddle butter side down.
Lay the crab on the bread on the griddle.
Lay your slices of cheese on top of that, cover with the other piece of bread, butter the bread and flip over,
when golden brown on each side.
