There is nothing as comforting as a good old-fashioned tater tot casserole. I have found that as the days shorten and the cold comes around again for another cycle, I start to crave hearty comfort foods.
Tater Tot Casserole is super easy and budget-friendly; it can literally become the best leftovers ever, and by the time the end of the week rolls around, I have had my fill of this comforting dish!
The secret to my Tater Tot Casserole success is that I layer all the ingredients, so you get all the flavors in every bite. I should call this Tater Tot Casserole Pie, given how deep dish I like to make it.
The ingredients you will need are:
1 bag of frozen tater tots
1/2 can of cream of mushroom soup
1 can of cream of celery soup
1.5 pounds of either ground beef or turkey
1 package frozen mixed vegetables
3 cups of shredded cheese
So the decision has to be, how much cheese do you really want to use. I say go big or go home hungry, so I load on the cheese for the final layer.
When I bake it in the oven, I put it on a cookie sheet so all the lovely cheese does not melt into the oven and make me regret my decision.
I hope you enjoy this recipe as much as I do and get it out each year, like your favorite sweater, when the cold weather starts to open the door and come in for a long visit.
Enjoy!
