When I am planning my weekly grocery shopping list and corresponding weekly meals, there are times when I just need something new and unique to spice up my daily life a bit.

You see I happen to luv vegetables in any shape or cooking method. One of my favorite things is to purchase the pre packaged broccoli slaw from the grocery store, add in minced garlic, red pepper flakes, grated ginger, salt ,pepper, flour, cornstarch and  baking powder. I than add in the 2 whole eggs (per 16 oz pkg), and mix it all together, this is how my vegetable pancake was created.

Many times in the summer I live off of zucchini, spiralized shredded, and zucchini pancakes, as my garden is an abundant giver and I usually have an extreme about of this delicious vegetable. I like to make the vegetable pancakes using shredded zucchini, carrots and red onions. Add in a small can of sweet corn, garlic pepper, and panko bread crumbs, flour, baking powder, cornstarch, and 1 egg. For spices you can us red pepper flakes, garlic and salt and pepper, form into a pancake and fry them up.

There are many different versions of this pancake, really based on what fresh vegetables you like and what is fresh and in season for your area.

 

Try adding in chopped red bell peppers, sliced mushroom, a few black beans, chopped celery and shredded potato.

When making these for breakfast, try adding in shredded red potato.  Pair with a soft boiled or sunny side egg for a complete meal.

  • This recipe is for the broccoli slaw vegetable pancake. Open the package of broccoli slaw, add to a medium bowl. Add in the grated fresh ginger, Add in the chopped red onions Add minced garlic
  • In a separate bowl measure in the cornstarch, flour and baking powder, mix together Add on top of the vegetables
  • Stir and mix the cornstarch, flour, baking powder and into the vegetables, mix very well Crack the eggs into a very small bowl, whisk together. Add the eggs to the vegetable mix well Add in the panko bread crumbs, mix well. Salt and pepper, add red pepper flakes
  • Add olive oil to your skillet Heat up Form the vegetable mixture into small pancake balls, Add to the hot pan, flatten with a spatula, cook on medium low until nice and brown on each side.
  • Plate the hot vegetable pancakes, serve with butter, or sourcream, or my favorite horseradish sauce.
