Goober is a family classic that mom served quite often to feed her large hungry family.
Depending on the size of your group, you will simply use a loaf of French bread, hamburger, tomato soup, green peppers, onion and cheese, its that simple.
Goober is so easy, you simply cut your French bread lengthwise in half, prepare the filling, add the filling to the bread, cover in veggies , cheese and bake for about 30 mins.
This dish will fill up the hungriest of the hungry, so delicious and satisfying, don’t be surprised if there aren’t any leftovers!
As mom cut thru the bread to serve each of us a piece we all eyed it making sure no one ever got even 1 inch more than the other person. No matter how many times we were fed this for dinner, it was always so delicious.
Mom would change it up by using different kinds of cheeses, sometimes she made it a Mexican goober or an Italian goober, or just a good old savory goober.
We also experimented with different kinds of French bread,
We would find fresh crunchy vegetables on top covered with all the warm wonderful gooey cheese to a meaty interior and finally that wonderful crunchy Italian bread that cradled everything in a loving embrace.

Goober Bread Bake

Cut the french bread in 1/2 lengthwise
dig out the bread leaving a crust shell-does not have to be perfect. -
Cook the hamburger, with salt and pepper, onion salt
drain off fat -
Add the bread diggings to the meat mixture toss around, pour the soup in, blend well.

Slice the tomato, pepper and onion.

Fill the bread shells with meat mixture
lay the tomato, pepper , onion and cheese on top. -
Bake 350 oven for about 20-25 mins until all crispy bubbly
