[wprm-recipe-jump]    [wprm-recipe-print] Taco Stack There are some days that I just start to crave taco stack. I don't know if its the meat, or the cheese or the spice. The thought of all those flavors hits me like a train. All I think about is devouring some of this hearty, spicy casserole. Taco Stack has always been one of the best go to meals for a quick,easy hot meal that you can whip up for your family during a busy week. The leftovers are awesome, I like to make a really large batch and two nights later have taco stack again. With the addition of fresh lettuce, tomatoes, chopped green onions and sour cream, this casserole offers a nice blend of spice and flavors. I usually make a nice avocado aioli to go with this, as a flavor component and also to tame the heat a little bit when I use those really hot peppers. The versatility of this casserole is the best, you can go from a nice mild version using tame get along with everyone peppers. You can also make a super hot version with all those super hot peppers, that add a ton of spice to the meat and if your brave enough as a garnish! This is where the aioli comes in handy, it really helps to sooth every bite and make it more palatable. There is always some on in every crowd that likes to put as much hot sauce or red pepper flakes as they can into every bite, so this is definitely a good meal for a diverse group.

Description

With the addition of fresh lettuce, tomatoes, chopped green onions and sour cream, this casserole offers a nice blend of spice and flavors.

Ingredients
  • 1 pound ground beef or turkey
  • 1 medium onion (chopped)
  • 1-2 jalapeno peppers (diced)
  • 1 small can diced green chili
  • 15 ounces diced tomatoes
  • 15 ounces can tomato sauce
  • 1/2 package taco seasoning (more to taste)
  • 12 corn tortillas (yellow or white)
Instructions
  1. Brown ground beef or ground turkey with onion and jalapeno in a skillet; drain fat. Add canned tomatoes, tomato sauce and taco seasoning. Stir and cook over medium heat until heated through. Place 1/4 c. meat mixture in bottom of a 9×13 baking dish. Place two tortillas side by side on meat mixture. Top each tortilla with some meat mixture and shredded cheese. Repeat layers until each stack contains 6 tortillas layered with meat and cheese. Continue until all the ingredients are used for stacking. Bake at 350 degrees for 20-25 minutes or until cheese is thoroughly melted. Cut each stack into quarters.

  3. Serve with sour cream and green onions or other taco fixings, if desired. This meal also goes well with a big green salad.
Note
You can substitute salsa verde for the tomato sauce for a nice flavor Try adding some sour cream, fresh salsa and cilantro, no one can eat just one!
