This pineapple flatbread BBQ pizza is so versatile.
You can adds oodles of cheese and veggies to it, or even sneak in some chicken or pork.
Changing the flavor is super easy, you can add pineapple and fresh spinach instead of the poblano peppers.
The pineapple flatbread BBQ pizza has a ton of flavor from the brown onions, poblano pepper, tangy BBQ sauce and gooey cheeses.
I like to serve this with a nice Italian side salad, the meal goes great from snack, to lunch or dinner.
Also a nice meal on a hot summer night when you don’t want to spend to much time in the kitchen.

Pineapple Flatbread BBQ style

The pineapple flatbread BBQ pizza has a ton of flavor from the brown onions, poblano pepper, tangy BBQ sauce and gooey cheeses.

Pickle the Onions
Place a foil lined baking sheet on top rack and preheat oven to 450.
Thinly slice onion.
Drain pineapple, reserve juice in a separate bowl.Stir in 1/2 of the onion, and half of the vinegar

Cook Onion
Add remaining onion and cook in oil until soft, you may add a small amount of water to prevent sticking.

Prep your ingredients
While the onion cooks prepare the poblano by slicing it into strips, toss in a small bowl with olive oil and salt and pepper.
Dice Mozzarella and chop the cilantro

Caramelize the onions
Increase the heat to the cooked onion, add pineapple and more oil, stir until pineapple is light brown.
Stir in remaining vinegar, cook until onion and pineapple are caramelized and jam like, stirring constantly.
Turn of heat and set aside

Make the Flatbread Pizza
Brush each flatbread with oil.
Remove baking sheet from oven, place flatbreads on sheet.
Spread BBQ sauce , top with caramelized onions and pineapple jam, poblano pepper Monterey jack cheese and mozzarella cheese
Place pizzas in oven until cheese is melty and edges are brown.
Top with cilantro, and pickled onion to taste before serving
