The first time I was told I was going to eat Grilled cheese with imitation crab, I made that face; you know that particular food face we all have, when something seems less than pleasing.

The golden browned sandwich was offered to me on a beautiful plate, with a neat stack of potato chips to accompany it.

The sandwich was eyeing me, as I began to interrogate it in my mind.  Would it taste good, would it be blah, or yucky or gross?

The only way to find out was to go ahead and take a bite, so I picked up the sandwich in both hands to minimize the cheese that was oozing out.

Since my mind was already made up about how this was going to taste, that first bite came as quite a surprise. The first bite was an explosion of deliciousness of abundant flavors and textures.

Bread was crunchy and buttery, the cheese was hot and oozing warm and salty, and finally the imitation crab had a soft light flavor that took this grilled cheese to the next level.

I have to admit that I ate two sandwiches that day, and as my eyes closed for my nap, I did not regret my participation at all.

Grilled Crab Cheese is a delicious cheesy grilled sandwich, that will take your breath away as it is so rich and flavorful.

Crock Pot Honey Chicken

Spaghetti Pie Casserole

Do you ever sit and stare at the food on your plate and try to figure out new ways to make this delicious meal?

One night as I was staring at the spaghetti noodles on my fork, this thought came to me  Why couldn’t I turn this spaghetti meal into a spaghetti casserole or better yet a spaghetti pie, kinda like lasagna with all those layers, just use spaghetti instead.

You still have the deep rich sauce smothering the spaghetti noodles and all those layers of hot bubbly mozzarella cheese, with a sprinkling of parmesan cheese on top!

It was so easy to create a hot bubbly casserole dish filled to the brim, with spaghetti, oodles of cheese, and a rich thick bubbly sauce full of fresh herbs and garlic, yes this is the vision.

 

Gather your garlic bread because you might want something to pile spaghetti onto, I luv doing this, it makes a big mess and feels so satisfying to bite into the fantastic spaghetti pie and a piece of hot crunchy garlic bread.

 

A very satisfying meal on a night after a long day where you just needs some good old comfort food.

 

This casserole makes the most excellent left-overs ever, you also can make multiple casseroles and freeze them, they freeze really well.

 

 

 

Goober Bread Bake

Goober is a family classic that mom served quite often to feed her large hungry family.

Depending on the size of your group, you will simply use a loaf of French bread, hamburger, tomato soup, green peppers, onion and cheese, its that simple.

 

Goober is so easy, you simply cut your French bread lengthwise in half, prepare the filling, add the filling to the bread, cover in veggies , cheese and bake for about 30 mins.

This dish will fill up the hungriest of the hungry, so delicious and satisfying, don’t be surprised if there aren’t any leftovers!

 

As mom cut thru the bread to serve each of us a piece we all eyed it making sure no one ever got even 1 inch more than the other person.  No matter how many times we were fed this for dinner, it was always so delicious.

Mom would change it up by using different kinds of cheeses, sometimes she made it a Mexican goober or an Italian goober, or just a good old savory goober.

We also experimented with different kinds of French bread,

We would find fresh crunchy vegetables on top covered with all the warm wonderful gooey cheese to a meaty interior and finally that wonderful crunchy Italian bread that cradled everything in a loving embrace.

Cranberry Relish

Just the words cranberry relish evoke an emotional response out of me, this was a ritual that me and my mom had first thing every thanksgiving day morning.

Starting at the age of  6 yrs, I would get up with the rooster crowing and go into the kitchen where mom already was, cooking and baking getting ready for the feast of the day.

She would sit me down at the old wooden table, where I would already find the metal grinder attached.  There was always a bowl of oranges and cranberries sitting there waiting for me to start grinding them

When I was very young mom would have the oranges cut into wedges for me in the bowl, as I got older I was trusted to cut my own, this was a big deal for me, I took immense pride in my part of the Thanksgiving day production.

This was a very messy job; the juices ran right down the grinder handle and dripped into a bowl.  My best dog “tasha” was always by my side, and she would luv to stick her head under the stream of oranges juices which made her sticky for the entire day.

I alternated between oranges and cranberries, grinding them into the glass dish, as one dish became over-flowing another empty one was put in its place.  We always made 3 glass pie plates full, mom was a big believer in left overs and making sure each family had some to take home.

The year that there was an empty seat at our Thanksgiving day table, I arrived very early at the homestead, entered the kitchen which hadn’t changed in 50yrs, I put on the biggest shoes I ever wore, grabbed the tattered apron, rolled my sleeves up and began preparing the cooking tradition.

I found time to sit down at the old wooden table attach the grinder cut the oranges and fill the bowl with cranberries, to make the cranberry relish, perhaps a tear or two fell into the juice bowl that year as I pushed and pulled the cold metal handle back and forth.

Tasha was no longer with me, in her place was Dori, now my best dog, and she too ended up with a sticky head from trying to taste the orange juice.

I still have that grinder, I spent many years using it, until it began to rust a bit, and turn very easily at all.

Nowadays, I make the relish using the food processor with the chopping blade.

The best part, the dogs heads are not sticky during the holiday.

Creamy Cream of Mushroom Soup

When I was in college I didn’t eat very well, there I said it outloud!

You know it’s a problem with the local fast food drive thru call you by your first name because they know your vehicle as it pulls into the drive thru.

The time had come after too many late nights eating food, that I am sure were not 100% all beef, and those delicious deep fried grease covered fries.

I made a change, and what a change it was.  I think my body went into shock for awhile as I poured nutrition into it.  I started to sleep better, and my concentration soared, and so did my grades!

One sunny Saturday morning, I laid out all the money I would have spent on fast food in front of me on the kitchen table, I was really surprised to see how much it really was!

Making the list came next, of all the things I wanted to cook and eat. However it dawned on me I wasn’t so sure there wwere pots and pans in my 1 bedroom apartment, I mean I had never even looked.

That was the first task, I located pots, pans, silverware, plates, cups and bowls. This was encourageing I found a pep in my step and headed out list in hand to the local grocery store.

As I entered the store I realized this to was a foreign experience, I felt like a tourist in Italy on a long holiday, not knowing the language, the culture or my way around.

Being in college I was blessed with problem solving skills, or so I was told, I mean I had survived this long, so I knew it was completely hopeless for me.

Looking at the list I went down each aisle and added to the cart the items I really wanted to get.

I put a can of cream of mushroom soup fresh mushrooms, and 1 onion in the cart.  I also added some hamburger and macaroni and cheese, and even some fresh vegetables, I could barley navigate to check out.

I believe this might have been the beginning of my frugality for me, as the kind woman began to scan items and check me out, I watched as the tally went up and up!

 

Knowing how much I had to spend, I picked out what was important and asked her to kindly put everything else back, I would get these items the next paycheck.

When I got home I unloaded the groceries, wiped off the dust from the cabinets and began to dream of food, I was super hungry at this point.   My left hand grabbed the can of mushroom soup, and my right had grabbed the mushrooms, my eyes landed on the onions, and I knew I was in business.

So off I went figuring out how to cook on my own for the very first time.  The soup was not that great, it seems I forgot to put the milk in.  However I was so very proud of myself for breaking up with the fast food guy, I actually could survive this crazy life and feed myself by cooking.

So many years have gone by from those days, the mushroom soup has gotten better and better over the years.  The family luvs it so much I always make a really big batch for the leftovers!

So heres to all those college students out there that are just figuring out how to cook and feed themselves and survive the college years.

You can do it!

Pork Tamale Enchilada Casserole

The family likes to call these tamale enchiladas, because they taste like tamales, yet look like an enchilada!

This all happened by accident one night, as I was rummaging around in the cupboard looking for something to make for dinner, as I often did.

I had this beautiful pork butt roast that was simmering with a bay leave in the crock pot, waiting for a good recipe to use it in.

So I had yellow corn tortillas, enchilada sauce, and a jar of salsa verde I had made this past summer.

I thought “hmmm , what does this all mean?”

It struck me like my forehead to the cabinet door, I had the fixins for tamales without the tamale part, and fixins for enchiladas without beef or chicken.

I could make Tamale Enchiladas!  and so they were born.

Once the pork was in the crock pot for about 2 hrs., I took it out and into a pan it went were I shredded it and poured on the salsa verde, adding a bit of extra garlic, (who doesn’t like garlic!), and some cayenne pepper.

The casserole dish was greased ready and waiting while the pork simmered and I warmed the corn tortillas in my cast iron skillet on the stove, until they were nice and firm.

There is nothing like a warm corn tortilla with fresh honey poured onto it, a great snack to keep my energy up while I assembled my new found creation.

I assembled the enchiladas spooning in the pork mixture, adding cheese, rolled up and placed into the casserole dish, I did this about 14 times, smothered everything with the enchilada sauce and a lot more cheese, popped it in the oven at 350 for about 25mins.

 

So hot and bubbly, so delicious!

Cream of Chicken Soup

As I lay in bed way to long one Sunday morning during the cold, long winter, I decided today was the day that I would never get out of my super comfy warm bed, I was cuddling with my favorite puppy dog, and the cat was laying with us somewhere under all the blankets.

Today was the day I would revolt against the world, and not get up and not do a darn thing all day, this lasted about 15 mins before I got antsy to get out of bed and stretch and start my day.

I pondered what were my goals for this lovely day, what was for dinner, and should I change out of my pj’s into my favorite sweats.

Than the thought struck me, what are days like these made for?  You know the somewhat cloudy, really cold day, with nothing to get done beside a little bit of tidying the house  and doing a few loads of laundry.    As I reached for my coffee cup, and cream, I realized I had the answer to all the universes questions.  I had cream in the fridge, so of course today was all about a hot, soothing, flavorful soup to fill my day.

I began the prep to make this creation I could already taste; it had sliced carrots, celery, garlic, sautéed onions, brown butter and of course shredded chicken all in a rich cream sauce.

One of the best creamy soups I have experienced in life is my Cream of Chicken soup; this soup will fill you up with a warm delicious hug in a bowl.

The best part however is that it is packed with flavor and textures, each spoonful is interesting and a wonder to the eyes, something new in every bite.

Please remember the only way to eat this delight, it to grab your favorite blanket, call your favorite dog to your side, and take your hot steaming bowl of soup to the couch or favorite chair, grab your remote and settle in for a good movie, today is the day, today is the best day of all!

I did want to mention, I chose the favorite sweats, and I finally did get out of the Pj’s!

Pumpkin Cinnamon and Walnut Rolls

My mom made the best cinnamon rolls hands down!

They were warm, sweet, buttery rolls, that were flaky and just melted in your mouth.

I must have eaten a ton of cinnamon rolls by the time my adult years arrived.

Many a morning was spent running and tripping up those stairs from my basement bedroom, to opening the door right into the kitchen, where I was immediately hit with the smell of the cinnamon roll baking, the sounds of mom in the kitchen, and all that warmth that wrapped around me like a soft blanket.

It was our ritual to have a freshly baked roll before I went off to playdates, or school, or morning band practice, and finally a full time job when those almost adult years were upon me.

You see I was what was called a late bloomer, I had a room in the basement and this became my haven, it was full of very little responsibility. I liked to spend as much “down” time as possible in the basement, reading or writing or dreaming my days away, little did I know what was really going on upstairs in the kitchen.

As the years went along like someone whistling a familiar tune, so did I, to this job and that ,to this boyfriend and that one, yet always returning back to that basement with the lack of responsibility calling my name.

One morning I had the sudden urge to go walk around the block walk before heading off to work, I trudged up those basement stairs, opened the door into the kitchen , the familiar sounds and smells immediately greeted me, and the warmth wrapped me in that familiar blanket of baking luv.

I stood at the top of the stairs and cracked open the door a bit to watch  Mom just hum about her morning routine, checking the oven to see if the rolls were done.

I took immense pride in the morning baking ritual and the morning eating ritual too, pride that my very own mom was a baking goddess and could day after day make the a very consistent dough for her rolls, although she had a secret weapon in using frozen store bought dough!

When the knowledge of the dough was finally made public to the family, at that moment I was shocked and amazed, however it didn’t make me luv the rolls or my mom any less in the end.

Many years have passed since those days at the kitchen table. I believe that is part of the reason, I now luv to bake.

I have a strong appreciation for anyone that can day after day make excellent rolls, pastries, buns, and cake.  I also admire my mom for taking the time to feed us, and making sure that she could give us something warm and delicious as we all headed out each day to take another step on our journey.

Admittingly I bought a bag of pre-made frozen dough, and found myself making cinnamon rolls the same way. It was quick and easy, and gave us all something for breakfast we could take and eat in the car.

One day as I watched that store bought dough unfold to perfection I began to question, why couldn’t I “make bread dough from scratch!”

I began experimenting thru the years with different kinds of doughs, there were many that failed and a few that were complete success.

The best recipe I created for a cinnamon rolls is the Pumpkin Cinnamon and Walnut Roll.

Sweet, moist, tender, full of pumpkin , spice , sugars, and walnuts, all rolled into perfectly shaped spirals, and baked to perfection.

The biggest issue I have with these recipes is that when I bake a pan, I tend to eat it all, morning, noon and oops, night..
