Mediterranean Baked Veggies is a light meal packed full of flavor.

You will luv the aroma that fills your kitchen when you roast the veggies.

The feta cheese adds a nice texture and tops off the dish along with the almonds.  Every bite is packed full of flavor, from the tomatoes, asparagus, feta, almonds and couscous.

  1. Ingredient Preparations

    Preheat oven to 450

    Mince garlic, cut ends from asparagus. Cut asparagus into 3 inch pieces.

    Finely chop the thyme if using fresh.

    In a small pot add the vegetable stock , bring to a low simmer over medium heat 

  2. Roast Veggies

     Add chopped asparagus, garlic, tomatoes and 1/2 of the thyme, coated lightly with oil to a cookie sheet.

    Roast on the middle rack tossing halfway thru for about 12-15 mins

    While these roast cook the chopped green onion in butter until fragrant 

  3. Prepare the Couscous

    Add Couscous and remaining thyme to the pot of vegetable stock 

     Cook covered until tender about 8 mins. 

    Drain liquid when done if necessary

  4. Prepare and Serve

    Fluff couscous and place on plates top with roasted veggies, add almonds, and feta on top
