Cream of Chicken Soup

As I lay in bed way to long one Sunday morning during the cold, long winter, I decided today was the day that I would never get out of my super comfy warm bed, I was cuddling with my favorite puppy dog, and the cat was laying with us somewhere under all the blankets. Today was the day I would revolt against the world, and not get up and not do a darn thing all day, this lasted about 15 mins before I got antsy to get out of bed and stretch and start my day. I pondered what were my goals for this lovely day, what was for dinner, and should I change out of my pj’s into my favorite sweats. Than the thought struck me, what are days like these made for?  You know the somewhat cloudy, really cold day, with nothing to get done beside a little bit of tidying the house  and doing a few loads of laundry.    As I reached for my coffee cup, and cream, I realized I had the answer to all the universes questions.  I had cream in the fridge, so of course today was all about a hot, soothing, flavorful soup to fill my day. I began the prep to make this creation I could already taste; it had sliced carrots, celery, garlic, sautéed onions, brown butter and of course shredded chicken all in a rich cream sauce. One of the best creamy soups I have experienced in life is my Cream of Chicken soup; this soup will fill you up with a warm delicious hug in a bowl. The best part however is that it is packed with flavor and textures, each spoonful is interesting and a wonder to the eyes, something new in every bite. Please remember the only way to eat this delight, it to grab your favorite blanket, call your favorite dog to your side, and take your hot steaming bowl of soup to the couch or favorite chair, grab your remote and settle in for a good movie, today is the day, today is the best day of all! I did want to mention, I chose the favorite sweats, and I finally did get out of the Pj’s! Enjoy!

Ingredients
  • 3 chicken breasts
  • 1/4 cup chicken stock
  • 1/4 stick butter
  • 1/2 onion (sliced)
  • 4 whole carrotts (small slices)
  • 3 sticks celery (chopped)
  • 2-4 tablespoons garlic minced
  • 1 large can cream of chicken soup
  • 1 cup frozen peas
  • 1/2 cup sour cream
  • 1/4 cup cream
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon mrs dash
  • 1 teaspoon oregano
  • 1 teaspoon basil
Instructions
  1. Add the chicken with the chicken stock to your stove top pan, cover and simmer until tender , remove set aside. In same pan add butter, brown until a little smoky and has a rich color. Shred the chicken and pour the brown butter on top, set aside.
  2. Saute the sliced onions, until golden brown. Add the garlic, carrots and celery, saute until soft and fragrant.
  3. In your crock pot or insta pot, turn the heat to low, add the can of cream chicken soup, stir well. Add the cream and sour cream.
    Add the chicken, peas and sautéed vegetables, salt, pepper, basil, oregano, Mrs. dash, stir well.

    Cover and simmer for 3-5 hrs.

Note
I like to play around with the sesoning for this soup.  Sometimes I use more oregano for a full flavor. Adding a few sprinkles of Mrs Dash- garlic blend also adds a nice flavor tone.
