Chicken Rosemary and Garlic Meatballs

  Moist, tender, packed full of flavor, Chicken Rosemary Garlic Meatballs. I like to serve mine with acorn squash for delightfully tasty meal.

Ingredients
  • 1 pound ground chicken meat
  • 1/4 cup soft butter
  • 1 egg
  • 1/2 finely chopped onion
  • 2 teaspoons minced garlic
  • 2 tablespoons parsley flakes
  • 2-3 tablespoons rosemary
  • 2 teaspoons basil
  • salt and pepper (to taste)
  • 3/4 cups panko
  • 3/4 cups bread crumbs
  • 4 tablespoons cooking oil
  • 3 garlic cloves large
Instructions
  1. Add the ground chicken meat to a bowl with the butter, mix well.

  2. Add the chopped onions, garlic, parsley flakes, rosemary,

    basil, salt and pepper to the meat, blend well.

    Add the egg, panko, and break crumbs to the meat mixture. 

    Mix very well.

  3. Form into small sized meatballs.

    Preheat your pan with a bit of oil in it.

    Add the meatballs, side by side to the preheated pan. 

    Add the large garlic cloves

    Cook on medium until golden on one side, roll over using a spoon, cook 

    thoroughly.

    Remove from heat.
